Making Pancakes! Fun & Interesting
Now for something a bit different, a cooking project. I’ve been making pancakes for roughly 40 years and have tried many different recipes, but this one is my favourite. It produces light, fluffy and most importantly, tasty pancakes with basic ingredients. Here they are:
- 1 cup all purpose flour
- 1 cup of milk, room temperature
- 1 ounce evaporated milk
- 1 large egg, room temperature
- 1 teaspoon salt
- 1 heaping tablespoon baking powder
- bacon fat from four slices of bacon
Cooking on location in the workshop:
Stir together the dry ingredients, then add the egg and milk. Mix thoroughly and set aside to rest while you cook the bacon. The batter should rest for a minimum of 10 minutes. It allows the flour to fully absorb the milk and the baking powder to act.
When the bacon is cooked, add the fat to the batter and stir well. Pour onto the heated griddle and cook until large bubble rise before flipping. This much batter makes two large or four small pancakes.
